Avocado Feta Salsa

This salsa recipe is a great source of heart-healthy fats from the avocado and olive oil, as well as other vitamins, minerals, and antioxidants which are shown to help prevent other chronic diseases.  The salsa can chill in the refrigerator for less than the recommended 1 to 6 hours, but allowing it to sit longer will help to soften the avocados and to bring out the flavors of all the ingredients.

1 ripe avocado, peeled, pitted, and chopped
2 cups tomatoes, chopped
¾ cup red onion, finely chopped
1 clove garlic, minced
2 oz. crumbled feta cheese ( could use light or fat free to decrease fat & calories)
½ cup cilantro, chopped
1 Tbsp. olive oil
1 Tbsp. red wine vinegar
Pepper to taste

Combine avocado, tomatoes, onion, garlic, and feta cheese in a large bowl.  Add olive oil, red wine vinegar, salt and pepper to taste and mix well.  Stir in cilantro.  Cover and refrigerate for 1 to 6 hours.  Serve with tortilla chips or pita chips.

Makes 16 servings (1/4 cup salsa)
