Fresh Greens and Wheat Berry Salad

This is a tasty salad that has a slightly different twist. Wheat berries are found in health food stores and are a wonderful addition to this salad..  You may substitute pasta, couscous, or brown rice for the wheat berries.  You may also substitute a mesculine lettuce mix for the greens if desired.  The unique combination offers fiber and nutrients in a fresh way.

1 cup uncooked wheat berries (whole wheat kernels)
3 cups water
1 cup roughly chopped parsley
1 head radicchio, torn into small pieces
½ cup roughly chopped arugula
6 tablespoons of olive oil
2 tablespoons of balsamic vinegar
1 clove garlic, minced
1½ teaspoon kosher salt
1 teaspoon freshly ground black pepper

Place the wheat berries and water in a saucepan and bring to a boil.

Stir and cover, reduce heat and simmer for 50 minutes, until soft but chewy.

Drain the wheat berries and spread them on cookie sheet to cool to prevent them from sticking together. Combine all the greens, olive oil, vinegar, garlic, salt, pepper and wheat berries.

Serving Size is ½ cup.  Serves 8.
