Grilled Marinated Vegetable Kabobs

It is so easy to increase our vegetables with their abundance during the summer. This recipe can vary as the vegetables come in season.  Enjoy these great sources of fiber and nutrients.

1 yellow squash, ½” cubes
1 zucchini, ½” cubes
1 red pepper, ½” cubes
1 mushroom
1 ear of corn, sliced ½” thick  (partially cooked in microwave 3-6 min.)
6 each red potato, quartered (partially cooked in microwave 3-6 min.)
2 ounces balsamic herb vinaigrette (recipe included)
 
Alternate vegetables on a bamboo skewer with mushroom in the middle.  (If using a wood skewer, soak it in water overnight.)  Marinate in balsamic vinaigrette for a minimum of two hours or overnight.

Cook on grill over medium heat until vegetables are tender.

BALSAMIC HERB VINAIGRETTE

1 tablespoon dijon mustard
1 tablespoon fresh lemon juice
2 tablespoons of balsamic vinegar
1 tablespoon fresh garlic, minced (4 cloves)
2 tablespoon of olive oil
1 tablespoon fresh basil, chopped
½ tablespoon fresh oregano, chopped
pepper to taste

Serves 6
