Kentucky Derby Pie
Desserts are more tedious to alter due to volume and how the ingredients interact in the baking process. We have used a lite syrup (could save more calories if it is sugar free), decreased the amount of butter, substituted Splenda for sugar, utilized egg substitute to and used the fillo dough instead of regular pie crust to decrease the cholesterol and fat. We left the chocolate chips the same and decreased the pecans. When using the fillo dough, we made each serving an individual dessert because it is difficult to cut after baking because of the extra crispy texture.
3/4 cup maple syrup
3/4 cup sugar
1/3 cup butter
3 eggs, beaten
2 Tbsp bourbon
1/3 cup chocolate chips, semisweet
3/4 cup chopped pecans
1 unbaked pie shell
whip cream for topping
Mix syrup, sugar, butter, eggs and bourbon until smooth. Stir in chocolate chips and pecans. Pour into pie shell and bake at 350° for 45 minutes. Serve warm with whip cream.

KENTUCKY DERBY PIE (alternate recipe)
¾ cup lite maple syrup, Hungry Jack
¾ cup Splenda
¼ cup butter
¾ cup egg beaters
2 T bourbon
1/3 cup chocolate chips
½ cup chopped pecans
8 sheets Fillo (phyllo) dough
Mix syrup, sugar, butter, eggs and bourbon until smooth. Stir in chocolate chips and pecans. Pour into pie shell and bake at 350° for 45 minutes. Serve warm with whip cream.
