Portobello Pizza

4 cups fresh spinach, cleaned & finely chopped
1-1/2 cups low- or non-fat veggie mozzarella cheese
3/4 cup finely chopped veggie pepperoni
1 tsp. dried basil
1/4 tsp. ground pepper
12 fresh portobello mushrooms, 3- to 4-inch diameter
Fresh basil

Preheat oven to 350 degrees F.  Combine spinach, cheese, pepperoni, basil and pepper.  Clean mushrooms; remove stems and place open side up on cookie sheet.  Spray each mushroom lightly with olive oil.  Spoon 2 Tbsp. spinach mixture on top.  Bake 12 minutes.  Garnish with fresh basil.

Nutrition Tip:  Cooked fresh mushrooms are more nutritious than canned, with almost three times the niacin and potassium, twice the iron and 15 times the riboflavin.
