Pumpkin Delights

Our pumpkin treats are nutritious as well as yummy. Here is the perfect dip to take to a potluck. The festive dish always adds to the presentation. You can hollow out a fresh pumpkin to use as a bowl or purchase a ceramic pumpkin that you can use each fall season. Pumpkin is a vegetable that we normally associate with pumpkin pie. It is rich in carotenoids that neutralize free radicals and attack our cell membranes, causing damage. You can use cooked fresh pumpkin or canned pumpkin. Enjoy!

Pumpkin Dip

Yield: 32 servings (2 Tablespoons)

1 – 15 oz can solid pack pumpkin
8 oz fat free cream cheese
¼ cup confectioners sugar
1 Tbsp ground cinnamon
1 Tbsp pumpkin pie spice
7 oz marshmallow cream
1 Tbsp grated orange peel or 1 Tbsp orange juice concentrate

Cream together pumpkin, softened cream cheese, orange rind, confectioner’s sugar and the marshmallow cream. Keep refrigerated until service. Serving with fresh apple wedges or ginger snaps makes a delightful dip.

Pumpkin Cake

Yield: 12 servings

1 pkg yellow cake mix
1 – 15 ½ oz can solid pack pumpkin
½ cup water
1/3 cup ground flax meal
1 tsp cinnamon
1 tsp nutmeg

Preheat oven to 350 F. Mix together all ingredients. Pour into 9" X 12" cake pan. Bake 25 to 30 minutes, until toothpick inserted comes out clean.
