Spinach Pie

Try this heart healthy spinach pie for an entrée or a side dish.  Salsa is substituted for cheese to make a tasty, low cholesterol dish.  This recipe is a great source of Vitamin A,  Iron, and Fiber.

14 oz. Spinach, frozen chopped (thawed & slightly squeezed)
3 oz. Mushrooms, fresh, sliced
1 tsp Garlic, dry, granulated (not powder)
Olive oil cooking spray
½ tsp Salt
½ tsp Pepper
3 each or (3 oz.) Egg whites
3 oz. Salsa, purchased

Spray pan with olive oil cooking spray.  Sauté mushrooms for 2 minutes.
Add chopped spinach, garlic, and salt and pepper. Cook for 3 minutes.
Pour lightly beaten egg whites over spinach and mushrooms.
Reduce heat and cook until egg whites are set up.
Remove egg/spinach mixture from pan,.
Warm salsa in skillet and garnish egg/spinach mixture.

Nutrition Information for ½ mixture:  152 calories, 10 g carbs, 10 g protein, 0 fat or cholesterol, 700 mg sodium, 5 g fiber
