Trail Mix Bars
These quick and easy homemade granola bars are the perfect after-school snack. Cut into bars and wrap the finished bars in wax paper or plastic wrap to make a portable snack great for anyone on the go.
2 cups rolled oats
¼ cup ground flaxseed
¼ cup peanut butter
½ cup brown rice syrup or honey
1 cup dried fruit (raisins, dried cranberries)
¼ cup sunflower seeds
½ teaspoon vanilla extract
½ teaspoon cinnamon
Heat the peanut butter and brown rice syrup over low heat (use a double boiler for the best results).
Once the mixture begins to soften, stir in the remaining ingredients and mix well.
Pour mixture into a large glass dish. Pre-cut into 14 bars.
Refrigerate for several hours.
Cut and wrap individually.
Recipe makes 14 bars.
